Brown Rice Muffins
Growing up whenever my mom would make soup these were the staple muffins in our house! Gluten-free and easy to make! You can serve with soup or eat with butter and honey!

Cooking Temp: 375 Degrees
Ingredients
- 1 1/2 cups rice flour
- 2 tsp. baking powder
- 1/2 tsp sea salt
- 1 Tbsp olive oil
- 3 Tbsp honey
- 3/4 cup rice or almond milk
- 2 eggs beaten
- 1 1/2 cups rice flour
Directions
- Preheat oven to 375 degrees
- Mix all dry ingredients together
- Add rice milk, eggs, oil and honey
- Beat until smooth
- Grease muffin pan ( makes 8 large or 12 small)
- Pour into pan fill 3/4 of the way up
- Bake 18-20 minutes
