Brown Rice Muffins

Growing up whenever my mom would make soup these were the staple muffins in our house! Gluten-free and easy to make! You can serve with soup or eat with butter and honey!

    Cook Time: 18-20 mins

    Cooking Method: Oven

    Cooking Temp: 375 Degrees

  • Ingredients

    • 1 1/2 cups rice flour 
       
    • 2 tsp. baking powder 
       
    • 1/2 tsp sea salt
       
    • 1 Tbsp olive oil 
       
    • 3 Tbsp honey 
       
    • 3/4 cup rice or almond milk 
       
    • 2 eggs beaten 
  • Directions

    1. Preheat oven to 375 degrees 
       
    2. Mix all dry ingredients together 
       
    3. Add rice milk, eggs, oil and honey 
       
    4. Beat until smooth
       
    5. Grease muffin pan ( makes 8 large or 12 small) 
       
    6. Pour into pan fill 3/4 of the way up
       
    7. Bake 18-20 minutes
