Charro Beans

I have been making charro beans for family get togethers since luke and I have been married.  Just throw all of the ingredients into a pot and simmer for a couple hours and you have a side dish or main dish you can serve over rice!

  • Ingredients

    • 6 slices bacon or turkey bacon 
    • 1 large sweet onion, diced 
    • 3 cloves of garlic
    • 2 green peppers, diced 
    • 1 bunch of cliantro 
    • 4 Large Tomatoes 
    • 1 pound dried pinto beans
    • 3 TBS of chicken bouillon paste ( I use this a lot instead of chicken broth but you can use that if you have it on hand) 
    • 2 tsp of salt, if needed add more
    • 1-2 jalapenos, remove seeds for less heat
    • 1 TBS of olive oil
    • 1 can or bottle of beer ( I use whatever luke has on hand)
  • Directions

    1. Start by cutting up the bacon into about 1 inch pieces and placing into a pot that is set at about medium to medium high heat. Cook bacon with a tablespoon of olive oil just until it browns slightly.  
    2. After bacon has cooked a little throw in diced onions, green peppers, and garlic and saute just for a couple minutes.  Now throw in the diced tomatoes, jalepenos, cilantro, beer, beans, salt, pepper, and chicken boullion.  Cover everything with water and bring to boil. 
    3. Simmer for 2-3 hours or until beans are tender. 
    4. Taste for seasoning and add more salt and pepper if needed.
