Chocolate Zucchini Bread

If you can have carrot bread why not zucchini bread? Of course, chocolate makes anything better right? This is moist, not overly sweet, and a great way to sneak your kids some veggies without them knowing!

  • Ingredients

    • 1/2 cup brown sugar 
       
    • 1/2 cup organic sugar 
       
    • 1 stick room temperature butter 
       
    • 2 eggs 
       
    • 1 tsp Vanilla 
       
    • 1 1/2 cups all purpose flour 
       
    • 1/2 cup unsweetened cocoa powder 
       
    • 2 tsp baking powder
       
    • 1/2 tsp salt 
       
    • 1/2 cup strong brew coffee
       
    • 2 cups zucchini, shredded 
       
    • 1/2 cup chopped dark chocolate or semi-sweet chocolate chips, just depends on your preference. We used a dark chocolate bar 70% cocoa
  • Directions

    1. Preheat oven to 350℉
       
    2. Cream together the 1 stick of butter, 1/2 cup of organic sugar, and 1/2 cup of brown sugar in a bowl with an electric mixer until combined.
       
    3. Combine the first egg and once mixed in then the second egg. Next add the 1 tsp of vanilla.
       
    4. Mix the 1 1/2 cups of flour, 1/2 cup of cocoa powder, 2 tsp of baking powder, and 1/2 tsp of salt in a separate bowl then combine the wet and dry together on low speed.
       
    5. Finally add the 1/2 cup of strong brewed coffee. When everything is combined stir in the zucchini and chocolate chunks with a spatula until incorporated.
       
    6. Place into a greased loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
