Chopped BBQ Salad

One of our favorite things is to throw together a salad with whatever we have. We love the mixture of ranch and BBQ sauce in a salad with especially some good BBQ meat like smokey turkey, yum! If you don't have any BBQ meat throw in whatever you have grilled chicken, roasted chicken, or make it vegetarian and skip the meat. Either way you will not be disappointed!

  • Ingredients

    Serving Size: one dinner salad

    • 1 TBS of olive oil
    • 2/3 cups of leftover chopped BBQ meat or any type of leftover meat like grilled chicken, smoked turkey, brisket, etc.
    • 1 1/2 cups of chopped baby spinach and baby kale salad mix. That is our favorite but use any salad mix that you like or have on hand
    • 1/3 cup of chopped carrots
    • 1/3 cup of sliced cherry tomatoes
    • 1/3 cup of chopped purple onion
    • 1/3 cup of chopped cucumbers
    • 1/3 cup of Lady M and the L Squad Street Corn Salad
    • 1/3 cup of your favorite BBQ sauce, we love Sweet Baby Rays
    • 1/4 cup of your favorite Ranch, we love Simply Dressed Ranch dressing


  • Directions


    1. If the BBQ meat is cold then on med-high heat place the olive oil and meat in a skillet and warm to desired temperature. If the meat is not already chopped then go ahead and chop into bite size pieces.

    2. Place the the chopped baby spinach and baby kale mix in a bowl or large plate then add the remaining of the ingredients including the warmed BBQ meat on top of the salad mix

    3. Mix the ranch and BBQ sauce together in a small bowl then pour over the salad. Depending on your preference this might be a lot of dressing so pour about half it, toss the salad so the dressing covers everything then taste. If more dressing is needed then add the desired amount.
