Chopped Beef Fajita Salad

One of our favorite things to make is a Chopped Fajita Salad with our leftover beef fajitas and salsa verde. I almost look forward to the salads more than making our delicious tacos with the beef fajitas. The recipe for the salad is below but get creative with the vegetables and what you put into the salad

    Prep Time: 5-7 mins


  • Ingredients

    Serving Size: one dinner salad

    • 1 TBS of olive oil
    • 2/3 cups of Lady M and L Squad’s beef fajitas cut into bite size pieces
    • 1 1/2 cups of chopped baby spinach and baby kale salad mix
    • 1/3 cup of chopped carrots
    • 1/3 cup of chopped red and/or orange bell pepper 
    • 1/3 cup of sliced cherry tomatoes 
    • 1/3 cup of chopped purple onion 
    • 1/4-1/2 cup of Lady M and the L Squad’s salsa verde
  • Directions

    1. If the fajita meat is cold aka leftovers, then on med-high heat place the olive oil and fajita meat in a skillet and warm to desired temperature 
    2. Place the the chopped baby spinach and baby kale mix in a bowl or large plate then add the remaining of the ingredients including the warmed fajita meat on top of the salad mix
    3. Pour the desired amount of salsa verde on top of your salad, take a picture and post to Instagram to make all your friends jealous of your amazing salad but don’t forget to tag us
