Double Chocolate Cookies

These cookies are so decadant and then we made them into ice cream sandwiches which took them to a whole new level! The ice cream helps balance out the chocolate perfectly!

  • Ingredients

    • 1 cup organic sugar
    • 1 1/4 cup brown sugar
    • 2 sticks of butter ( I love using Kerrygold butter) 
    • 2 eggs
    • 1 1/2 tsp vanilla extract 
    • 1 tsp baking soda
    • 1 tsp sea salt
    • 2 cups unbleached all-purpose flour
    • 2/3 cup baking cocoa powder
    • 10-12 oz white chocolate chips ( I love using ghirardelli) 
    • 1 pint vanilla ice cream, optional ( if making into ice cream sandwiches)
  • Directions

    1. Preaheat the oven to 350℉. 
    2. Cream butter and both sugars together in an electric mixer fitted with the paddle attachment. Once combined add 2 eggs, vanilla, salt, and baking soda. 
    3. Next, with the mixer on low add the flour and baking cocoa.  Mix just until everything is incorporated. 
    4. Add baking powder, baking soda, salt, and flour to the butter, sugar and egg mixture.  Mix just until incorporated.  Finally mix in the white chocolate chips. 
    5. Line a baking sheet with parchment paper and drop a tablespoon of the batter onto the lined baking sheet ( about 12 should fit onto the baking sheet). Bake for 12-15 minutes. Cool on a wire rack when done.  
    6. Optional: Using your favorite vanilla ice cream scoop a large scoop and place between two of the cooled cookies and wrap in freezer paper and place into the freezer to harden for about 30 minutes.
