Fresh Apple Cake

Luke grew up with his family making this fresh apple cake in Scotland. Over the years it became a family staple recipe that everyone loves and still makes today! It's a moist light cake that is not overly sweet with chunks of fresh apple. The best part it's super simple to make!

  • Ingredients

    Cake:

    • 1 stick butter at room temperature ( I use kerrygold) 
       
    • 2 cups organic sugar 
       
    • 1 tsp vanilla 
       
    • 4 eggs 
       
    • 2 cups all-purpose flour 
       
    • 2 tsp baking powder 
       
    • 1/2 tsp sea salt 
       
    • 5 cups Granny Smith Apples, peeled and chopped into small pieces about 4 large Apples

     

    Cinnamon sugar topping:

    • 2 tsp sugar 
       
    • 1 tsp cinnamon 
  • Directions

    1. Preheat oven to 350 degrees. 
       
    2. First cream together 1 stick of butter and 2 cups of sugar in a bowl with an electric mixer. Add the 4 eggs one at a time and continue to beat after each addition.  
       
    3. In a separate bowl mix together 2 cups of flour, 2 tsp of baking powder and 1/2 tsp of salt. Once mixed, add that mixture to the creamed butter, sugar and eggs and mix until combined.
       
    4. Next fold in the 1 tsp of vanilla and the 5 cups of chopped apples. Then spread the mixture evenly into a greased 9x13 pan.
       
    5. Now for the topping, combine 2 tsp of sugar and 1 tsp of cinnamon into a small bowl then sprinkle on top of batter in the pan.
       
    6. Bake at 350℉ for 45 minutes.
