One Pot Chicken and Black Beans

One pot recipe that is amazing using chicken, black beans, and rice! Full of flavor and easy! This even makes great leftovers.

  • Ingredients

    • 4 chicken thighs
    • ​salt and pepper
    • ​2 TBS. olive oil 
    • ​1 cup jasmine rice ( I love basmati as well) 
    • ​1 whole lime
    • 1 can Black Beans, drained and rinsed
    • ​3 cloves garlic 
    • ​2 cups chicken broth 
    • 1 bunch of cilantro
    • ​avacado and hot sauce for serving 
  • Directions

    1. Pat the chicken thighs dry with paper towels (this helps the skin to brown and get crispy.) Season the thighs with a sprinkle of  salt and pepper on both sides 
    2. Heat the olive oil in a skillet on medium- high heat. Once hot place chicken thighs skin side down and sear for 2-3 minutes on each side ( the chicken does not need to completely cook through here just searing the outside will finish cooking later). While chicken is cooking cut up garlic cloves. Remove chicken thighs from skillet and add garlic and sauté for 1 minute.  Add rice, chicken thighs and chicken broth into the skillet.  Bring to a boil then turn the heat down to a simmer and cook until rice is tender and chicken is cooked through about 15-20 minutes. 
    3. When done remove the thighs from the skillet and set aside.  Squeeze the whole lime and add the black beans to the rice and mix together. Cut up cilantro leaves and sprinkle on top and mix together. Now at this point you can either serve the chicken thighs whole or you can cut them up and mix them into the rice and beans.  
    4. To serve, I like to add to a bowl with avocados or quick guacamole and some chalula. Easy one pot meal and can be ready in 20-30 minutes!
