Pecan Crusted Chicken Tenders

Everyone is always looking for ways to make chicken more exciting especially for kids! These chicken tenders are so tasty all my kids devoured them and even asked for more! They definitely beat out those frozen ones we all make from time to time!

    Cooking Temp: Medium and 350℉


  • Ingredients

    • 2 chicken breasts, cut into strips 
    • 2 TBS olive oil 
    • 2 TBS butter 
    • 4 slices gluten-free bread such as Udi's ,toasted 
    • 1/2 cup pecan halves 
    • 3 eggs, beaten 
    • 2 tsp salt 
    • 1 tsp pepper 
    • 2 tsp no salt all purpose seasoning, we use Costco's Organic 21 Spices Seasoning
  • Directions

    1. Preheat the oven to 350℉
    2. Season your chicken breast that are cut into strips with a tsp of salt, 1/2 tsp pepper and 1 tsp of the no salt seasoning. Set aside. 
    3. In a food processor add the 4 slices of toasted bread torn into chunks and the 1/2 cup of pecans and blend until mxiture becomes crumbs.
    4. Add the last tsp of salt, 1 tsp no salt seasoning, and 1/2 tsp pepper and pulse to mix. Place onto a plate for dredging. 
    5. Heat 1 TBS of butter and 2 TBS of olive oil in a non stick skillet over medium heat.
    6. Dredge the seasoned chicken into the egg then into the bread crumb mixture and brown in the skillet. Cook for 2-3 minutes on each side. 
    7. Place the chicken onto a cookie sheet with a rack (if you do not have one no worries just place directly on the cookie sheet).
    8. Once all the tenders are cooked then bake for another 10 minutes or until the chicken cooked all the way through.
