Roast Chicken

We absolutely love this recipe, it's easy and simple but delicious! This is one of our go to weekly recipes, when we have guest, or if we are sending a meal to someone.

    Cooking Temp:  425 degrees F

  • Ingredients

    • 1 (4-6 pound) whole chicken
    • ​salt and pepper
    • ​1 large sweet onion, sliced
    • ​2 Tbs Olive oil 
    • ​1 lemon, quartered
    • ​1 head of garlic, sliced down equator 
    • ​3 Tbs Butter, Melted 
  • Directions

    1. Preheat oven to 425 degrees 
    2. Remove and discard the chicken giblets then rinse the chicken. Place on paper towels and pat dry. Salt and Pepper the cavity of the chicken well. 
    3. Meanwhile, slice 1 large sweet onion and place into a roasted pan or 9x13 baking dish. Toss onions with 2 tbs of olive oil and sprinkle with salt and pepper. Place chicken on the bed of onions. Stuff Chicken with one lemon quartered and a whole head of garlic sliced down the equator. 
    4. ​Melt 3 Tbs of butter and coat chicken with butter. Liberally salt and pepper the chicken.  
    5. ​Place chicken into preheated oven and roast for 1.5 hours or until juices run clear when cut between the leg and thigh. 
    6. ​Remove chicken from oven and let rest for 10 minutes. Serve.
