Roasted Broccoli

There is something about roasting broccoli that makes it so delicious even our dog who eats nothing green devours it!

  • Ingredients

    • 2 large heads raw broccoli 
       
    • ​4 TBS olive oil 
       
    • ​2 tsp salt 
       
    • ​1 tsp black pepper
       
    • ​3 cloves garlic, peeled and diced
       
    • 1/4 cup grated parmesan cheese 
       
    • ​1/2 lemon, juiced
       
    • 4 TBS toasted pine nuts
  • Directions

    1. Preheat oven to 425° F
       
    2. ​Cut broccoli into floret pieces and place onto a baking sheet.
       
    3. Toss the garlic onto the broccoli and drizzle broccoli with olive oil. Sprinkle with salt and pepper.
       
    4. Roast for 20-25 minutes until tender and the ends are slightly brown and crisp. 
       
    5. Remove from the oven and immedietly squeeze 1/2 lemon, sprinkle with parmesan cheese, and toss pine nuts over the top. Serve.
