Roasted Vegetables

Trying to find new ways to make vegetables is hard and even harder to make something the kids will eat! This recipe is simple, prep time quick (which is really important especially during the week), and all the different vegetables and textures makes this unique and delicious!

  • Ingredients

    • 1 red bell pepper
       
    • 1 green bell pepper
       
    • 1 zucchini
       
    • 1 yellow squash 
       
    • 1 package of mushrooms
       
    • 1/2 cup of olive 
       
    • 1/2 tsp of sea salt
       
    • 1/2 lemon 
       
    • 3 tsp of parmesan 
       
    • 2 TBSP of no salt all purpose seasoning, we use Costco's Organic 21 Spices Seasoning
       
  • Directions

    1. Preheat oven to 425° F
       
    2. ​Dice all the vegetables and place in a medium to large mixing bowl then add the 1/2 cup of olive oil, 1 TBS of seasoning, and 1/4 tsp of sea salt. Mix everything together with a rubber spatula. Then add the last TBS of seasoning and the other 1/4 tsp of sea salt and mix everything together. This is to try to make sure all the vegetables are seasoned.
       
    3. On a parchment lined large cookie sheet, evenly spread the seasoned vegetables and place in the oven.
       
    4. Cook on 425° F for 20 mins or until tender with a fork. If you like your vegetables more with a crunch then check them at 15 mins.
       
    5. Once cooked, squeeze the 1/2 lemon and sprinkle the 3 tsp of grated parmesan over the vegetables. Make sure if you add more salt then do so after you add the parmesan and taste. 
       
    6. Serve and enjoy!
