Shepard's Pie

Luke loves shepards pie and came back from a pub in Houston wanting to add curry to it and at first I thought he was crazy but when we finally did the product was amazing. Here is our take on the classic! So delicious and our son asked for seconds!

    Cook Time: 20 mins

    Cooking Method: Stove and Oven 

    Cooking Temp: Med-High, 400 degrees

  • Ingredients

    • 1 lb ground ground beef, lamb, or turkey
    • 2 Tbs olive oil 
    • ​1/2 medium sweet onion ( about 1 cup) 
    • 2 carrots, peeled and chopped 
    • 2 cloves garlic, peeled and chopped 
    • 2 TBS All purpose flour
    • ​3 TBS tomato paste
    • 1 cup beef broth
    • 1 tsp salt and pepper
    • 1/2 tsp madras curry powder 
    • 1 tsp dried thyme
    • 1 tsp worcestershire 
    • 1/2 cup frozen peas

    For the mashed potatoes:

    • 1 1/2 LBS gold potatoes, chopped into chunks
    • 3 TBS butter
    • 1/4 cup heavy cream or milk 
    • 1 1/2 tsp salt
    • 1 tsp pepper 
  • Directions

    1. Preheat oven to 400 degrees. 
    2. Peel and dice potatoes and place into a sauce pan and cover with water and bring to a boil. Simmer for 10-15 minutes until potatoes are fork tender. Drain the poatoes and place back into sauce pan and mash. Add cream, butter, salt and pepper and mash until smooth.  
    3. While the poatoes are boiling prepare the filling. Heat a cast iron skillet to medium heat add olive oil and saute onions for 2-3 minutes.  Add carrots and garlic and saute another couple of minutes.  
    4. Add the ground beef to the pan and cook until browned or cook through.  Add 1 tsp salt and pepper.  
    5. Sprinkle with flour and cook for a minute. 
    6. Add tomato paste, worcestershire, beef broth, dried thyme, and curry powder. Simmer mixture for 10 minutes until thickened. Stir in frozen peas.
    7. Carefully smooth the poatoes over the top of the meat mixture in cast iron skillet. Place in oven and cook for 10-15 minutes or until slightly gloden and bubbly. 
    8. Remove from the oven and cool for a few minutes before serving.
