Street Corn Salad

This is our take on roasted Mexican street corn but in a salad form. We have literally put it on everything because it is so good! We have added it to loaded BBQ baked potatoes, salads, and served as a side with burgers. Try it out and be creative with what you serve it with and on!

  • Ingredients

    • 2 cans of whole kernel corn, drained
    • 4 oz can of diced green chiles
    • 1/2 red bell pepper chopped
    • 1/2 orange bell pepper chopped
    • 2 cloves of garlic finely chopped 
    • 1/2 cup of cilantro finely chopped

    The Sauce

    • 1/4 cup of Mayo
    • 1/4 cup of Sour Cream
    • 1 TBS of Cholula or another hot sauce
    • 1/2 TSP of salt
    • 1/2 TSP of black pepper
    • 1/3 cup of fresh grated parmesan 
  • Directions

    1. Start by adding the diced bell peppers, corn and green chiles to a skillet with 2 Tbs olive oil. Saute until peppers are soft about 3-5 minutes.  
    2. Add diced garlic and cilantro and saute for another 1-2 minutes. 
    3. Remove from heat and pour mixture into mixing bowl. Add mayo, sour cream, parmesan and Cholula. Mix well. 
    4. Serve warm topped with parmesan and cilantro or serve cold if serving on top of a salad.
